Meals for 4 for under $11: Chicken fajita cupcakes

Steve Schroeder from Reno Street Food joined us in the studio Thursday morning to share a tasty meal for 4 under $11. This week, he made chicken fajita cupcakes, with your favorite fajita fillings, baked in tortillas and made into cupcake form.

Makes 12 servings


  • 1 lbs skinless boneless chicken breast
  • 1 packet fajita seasoning
  • 1 tbsp minced garlic
  • 1/3 cup water
  • 1 16 oz bag frozen red and green peppers and onions
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cheddar cheese
  • 12 small flour tortillas


  1. Preheat oven to 375 F°. Slice chicken breast and saute in a large skillet over medium-high heat. Stir in fajita seasoning and water. Add frozen peppers and onions. Bring mixture to a boil, then reduce heat to low. Simmer for 10 minutes, or until water is absorbed.
  2. Spray 12 regular muffin cups with cooking spray. Slice of the rounded edges of the tortilla, make a square. Place one tortilla in each muffin cup. Add black beans, add cheese, add chicken/pepper mixture evenly between each cup. Sprinkle cheese over the mix. Repeat.
  3. Spray the tortillas with cooking spray, as this will help them bake without burning.
  4. Bake for 10-12 minutes, or until cheese is bubbly and tortillas are golden brown. Let stand 5 minutes before serving.
  5. Serve with your favorite fajita toppings: salsa, sour cream, more cheese, etc
  6. And a side of cilantro, lime rice.
